Place the figs into a high-sided frying pan, sprinkle with sugar, cover barely with water. Cook over a low heat for 30 to 40 minutes. Drain the figs. Grate the sandwich loaf to obtain white bread crumbs. Fry the brioche loaf slices in butter. Arrange them on an ovenproof dish. Halve the figs, divide up on the brioche loaf slices, sprinkle with a little bread crumbs, lightly sprinkle with the fig syrup. Bake in a very hot oven for 5 minutes.
